AVIF is the newer and, in pure compression terms, the better format. It typically produces files smaller than WebP at the same visual quality. Converting away from it therefore costs you some file size, and the reason to do it is support rather than efficiency.
WebP has a several-year head start. Browser support for both is now good, but a lot of desktop software, CMS installations, upload forms and image pipelines handle WebP and choke on AVIF. If something in your workflow will not accept an AVIF, converting to WebP is usually the smallest step that fixes it, and keeps you far ahead of falling back to JPEG.
Expect the WebP to be somewhat larger than the AVIF — commonly 20-30% — while remaining much smaller than the equivalent JPEG or PNG. Transparency is fully preserved, as both formats support an alpha channel.
As with any conversion between lossy formats, this re-encodes data that has already been compressed once. Convert from your original where you have it.
